In their words - Bright, and zesty, the wine jumps out the glass, showing Meyer lemon, apple core and lime flower. Full of freshness and vitality, pear and a touch of saltbush emerge.
The freshness continues on the palate - granny smith and fresh cut lemon abound. Subtle phenolics and subtle yeasty complexity add volume, and the wine hums along, courtesy of a delicate, per- sistent bead. Finally, a chalky, appley finish provides definition and ample length to a sparkling that shows a fine balance of acidity, freshness and savouriness.
Critics thoughts - Delicate and polished, showing aromas of lemon peel, sourdough, sliced pears, green apples and grapefruit with a saline touch. The palate has vibrant acidity and a fresh, graceful and dry finish. A restrained version of this wine with no malolactic conversion. There's a lovely mineral edge and refinement here.
