Bellwether Coonawarra Cabernet Sauvignon 2016

A late release vintage of Cabernet Sauvignon from Gourmet Traveller's 2021 Winemaker of the Year; Sue Bell.

From 30 year old vines in cool Coonawarra, South Australia, hand-picked and hand-sorted by Sue herself. The juice undergoes a cold soak for 10-12 days in open top fermenters. 10% of the wine is kept on skins for 4-6 weeks before blending. After ferment, the wines are placed in oak for 18 months, 1/3 Bordeaux Barriques and 1-2 year old barrels for the rest.

A pure, expressive example of Australian wine, with depth and layers. Notes of dried sage, rosemary, dark chocolate and black currant. Deep and earthy with a hint of savouriness. Will cellar well for 25-30 years, if you can wait that long.
