Roasted Bugs With Brown Butter & Garlic
Description: Serves 4
Ingredients:
4 x Large Green Morton Bugs (cut in half & cleaned)
1 Clove x Garlic, roughly chopped
1 tbs x Fresh Lemon Juice
1 tbs x Chives, finely Sliced
3 tbs x Butter Extra Virgin Olive Oil Salt & White Pepper
Directions: Pre-Heat an oven to 180 degrees Heat a heavy based pan with a little olive oil Place the bugs in flesh side down and place in the oven for 8 mins Remove the bugs from the oven and return them to the heat, turn them back to fresh side up Add butter and allow the butter to foam up and gently go golden brown, add your garlic & lemon juice and remove from the heat. Season with salt, pepper & fresh chives Serve in a bowl, 2 halves per serve with a good generous spoon of buttery, garlicky goodness.
