Aligoté is normally associated with Burgundy, but Natillie Johnston gives it a convincing Australian home in the King Valley. The grapes are hand picked and whole-bunch pressed, then wild fermented and matured on lees across French oak and stainless steel.

Lemon rind and green apple provide the zip, while jasmine, lemon curd and cashew add a softer, more textural side. The finish is mouth-watering and lightly savoury. It is a curious, energetic white made by someone clearly enjoying the possibilities of the variety.
