The palate is silky and energetic, built around cool-climate freshness and fine, polished tannins. Fresh acidity gives the fruit plenty of snap, while a savoury, mineral edge adds another layer underneath. Sentio is all about site-driven wines, and this is a beautifully expressive look at Pinot Noir from Mount Gambier. Elegant without being delicate, serious without taking itself too seriously. A cracking example of just how exciting Australian Pinot Noir can be.
