Sato L Atypique Pinot Gris 2023
Fruit from Bendigo and Bannockburn, grown on sandy loam and schist-laced soils, gives it both energy and edge. Farmed without pesticides or synthetic inputs, the grapes were hand-picked and fermented naturally, left lounging on skins for a generous 29–36 days.
That long maceration builds texture, spice and a gentle chew, giving the wine a personality that borders on rebellious. Fourteen months in French oak adds calmness and contour, never overpowering, just smoothing the edges in all the right ways.
Bottled unfined and unfiltered with only the slightest whisper of sulphur, it’s as pure and honest as Pinot Gris gets in Central Otago.
Expect notes of pear, stone fruit, subtle florals and a savoury mineral thread, all carried on a supple, textural palate with bright, natural drive.
