San Salvatore Aglianico Ceraso 2021

Made from 100% Aglianico grown around Capaccio-Paestum, it’s all about dark fruit, freshness and that wonderfully savoury southern Italian character. Blackberry and black plum come first, followed by black cherry, rosehip and a flick of black pepper. There’s plenty of flavour, but the tannins are silky and polished rather than big and grumpy. Fermentation and ageing take place entirely in stainless steel, so there’s no oak getting between you and all that juicy fruit. Fresh acidity and a distinct mineral streak keep the palate lively and surprisingly energetic. It finishes smooth, savoury and persistent, with berries, spice and a lovely stony edge. Aglianico with the volume turned up on fruit and freshness rather than oak and muscle.
