Salvo Foti Aurora 2024

Made from 90% Carricante with a little Minnella Bianca, grown high on the eastern slopes of Mount Etna.
Everything is done by hand, with whole bunches pressed directly before a natural fermentation and ageing in stainless steel.

There’s lemon rind, salted lime and crisp green apple, joined by white flowers, citrus blossom and a little pineapple skin.  The palate has this lovely creamy, almost phenolic texture, but underneath it all is a cracking line of bright acidity.  Chalk, crushed rock, sea-spray salinity and that unmistakable volcanic edge.  It’s light on its feet, incredibly pure and seriously energetic, with fruit and minerality pulling in opposite directions in the best possible way.
