The elephant on the Delsol label is not simply decorative. Local legend has Hannibal and his elephants passing through this corner of the Languedoc on their journey towards Rome. Today, the estate covers twenty hectares of red earth and pine-fringed countryside beside the Étang de Thau, where Mediterranean breezes temper the warm southern climate.

Made entirely from Piquepoul Blanc and fermented in stainless steel, this is light, dry and wonderfully alert. Lime, lemon and green apple meet softer notes of hawthorn and lime blossom, while a flicker of thyme and coastal salinity sharpens the finish. There is plenty of acidity, but a gently rounded texture keeps everything friendly rather than severe.
