Crazy delicious dessert wine from one of our favourite wineries in Tassie, Pooley.  Aromatic and luscious through the whole glass, a delight.

 

In their words - The production method for Cane Cut Riesling is a technique used to make a sweet dessert wine by concentrating the sugars and flavours in the grapes.

 

Here is a brief description:

 

Cutting the Cane: Near or at optimal ripeness, the fruit-bearing cane (the woody part of the vine where the grape bunch is attached) is intentionally cut or partially severed from the main vine.


Dehydration: By cutting the cane, the supply of water and nutrients to the grapes is halted. The fruit is left hanging on the vine, where the grapes begin to dehydrate, thus concentrating the sugar, flavour, and acidity.


Harvest and Vinification: After a period of drying (which can be several weeks), the shriveled, high-sugar grapes are hand-picked, pressed, and fermented. The fermentation is often stopped early to retain a high level of residual sugar, resulting in a lusciously sweet wine that is balanced by the concentrated, high natural acidity of the Riesling grape.


The term "Cane Cut" originated in Australia and is essentially a modern, vineyard-based version of the traditional European "straw wine" or passito method.
