Exquisite white Burgundy that displays energy and vitality. Pierre-Yves Colin white wines are whole bunch pressed, fermented with natural yeasts, aged on lees for up to 18 months in mostly in 350 litre barrels with no lees stirring and no filtration. Pierre-Yves Colin-Morey has established himself as one of the rising stars of Burgundy.
Pierre-Yves Colin purchased three parcels in the Hautes Côtes in 2014 with Benoît Riffault and Emilie Sauzet, which he collectively refers to as ‘Au Bout du Monde’. The grapes get the same treatment: a light crush, virtually no settling and then into cask for a year and a further six months in tank. In 2020 the result was predictably sunny but there were citrus notes as well and enough freshness to bring the wine into balance. Drinking Window 2021 - 2031.
