Pheasant's Tears Chkhaveri 2022
Chkaveri is a versatile pink-skinned grape from Guria is western Georgia. The fruit is grown in Pheasant’s Tear’s Kvashta vineyard, handpicked when ripe and put straight into kvevri. It sees only a week of skin contact before being transferred to another kvevri to mature for 8 months.
Established in 2005 in the Kakheti region of Georgia, Pheasant’s Tears is the brainchild of John Wurdeman and Gela Patalishvili. Inspired by Georgia’s ancient Polyphonic songs, John and Gela embarked on a mission to revive the country's rare endemic grape varieties. Their vineyards are managed organically, with grapes hand-picked in the morning to express the site's terroir. Utilizing traditional methods, grapes are crushed by foot and fermented in clay kvevris buried in sand, with no oak, fining, or filtration involved.
