La Violetta Das Sakrifizz Pet Nat Riesling

Made from 100% Riesling in the Great Southern region of WA. Aromatics of citrus, ginger and native florals. Plenty of fresh acidity, a touch of grapefruit and subtle complexity. 

Winemaker’s notes: Das Sakrifizz is produced only in years when particular barrels from the Das Sakrileg riesling programme show a line and finesse ideally suited for sparkling wine. The base wine is unfined and unfiltered and finishes ferment in bottle as per méthode ancestrale, a technique originating in 16th century France. As it is undisgorged, some small sediment remains in the bottle, which will protect the wine from oxidation as it continues to age and gain further complexity.
