In their words -  Energetic, fine bubbles surge in the glass, with alluring aromas of citrus blossom and delicate floral honey. The palate displays a complex, layered spectrum of flavours from brioche, grapefruit and white nectarine to Tasmanian kunzea honey and toasted almonds, swathed with creamy, softy yeasty complexity. With each sip the palate is left refreshed by gentle acidity.

60/40 per cent chardonnay/pinot noir; five years and nine months on lees, disgorged Dec 2022. Pale straw with a fine, energetic bead. Such a lovely smelling wine. White peach, apple and citrus tones. Hints of dried honey, white flowers, almond meal, lemon zest, clotted cream, sea spray and crushed stone.
