No polishing, no heavy oak and very little makeup: this is organically grown Margaret River Shiraz presented with all its edges intact. Jo Perry wild-ferments whole berries and bunches in open bins, basket presses the wine before dryness and bottles it without fining or filtration.

Blackberry, red plum and dark cherry have plenty of ripeness, but pepper, dried herbs and a salty snap stop the fruit becoming sweet or sluggish. The texture is juicy, the tannins relaxed and the finish deliciously untidy in the best possible way.
