de Vie and, more recently, fruit liqueur. They were granted distilling permits in 1879. Today, Jean-Marc Roulot continues the tradition whilst enabling evolution and improvements. The Williams pears are sourced at Orches in the Hautes Côtes de Beaune, Burgundy. These are among the tastiest Pears in France.

 

Vinification: Jean-Marc Roulot buys the Williams pear at Orches in the Hautes Côtes de Beaune. These Williams are among the best in France.  Once harvested at the right time with Jean-Marc’s eye for fruit ripeness, the pears are fermented in a stainless still tank to then be distilled. The aging is crucial to achieve balance. As such, the young Eau de Vie is carefully kept in glass carboys and stored for several years in attics. To soften and complete its aging, the Eau de Vie must undergo temperature variations for years.


Critics thoughts - The Eau de Vie Poire du Roulot, made from Williams pears sourced in Burgundy’s Hautes-Cotes de Nuits, is sweet and sensual right out of the gate. Captivating aromatics make a strong opening impression. White flowers, mint and intense green pear fruit are beautifully delineated. An eau de vie of striking perfume, depth and finesse, the Poire is an utterly captivating eau de vie that will thrill those lucky enough to taste it. Superb. 97 points, Antonio Galloni, Vinous.
