Cultivated in volcanic soil atop limestone on a northeast‑facing slope, this wine is hand‑picked, gently open‑fermented with around 40–50% whole bunch, and matured partly in French oak to finesse its wild spirit. It greets you with dark cherry, red plum and forest‑floor earth, threaded through savoury spice and mineral tension. The palate is medium‑bodied yet firm, with fine, grainy tannins keeping everything taut and elegant. There’s a savoury, meaty twist and a long textured finish—fresh, edgy and multi‑layered, it’s Pinot Noir that’s plush yet structured, serious about flavour but never solemn.
