Bellwether Cabernet Sauvignon 2008

This ageing Coonawarra Cabernet is a proper gentleman of a wine—deep ruby in the centre with a hint of fading at the rim, yet still holding firm. Aromas of dusty eucalyptus, cedar and just-ripe blackberry speak clearly of its Coonawarra roots. The palate is balanced and elegant, with fine-grained tannins and refreshing acidity, gently mellowed over time. The mid-palate has softened beautifully, but it still carries itself with poise. Matured in French oak (around 30% new), hand-picked, and wild-yeast fermented, it shows subtle notes of milk chocolate and savoury spice. Drink now or savour it over the next few years—it’s aged with grace and is showing its best self.
