Dalrymple Single Site Estate Ouse Pinot Noir 2021

100% Pinot Noir, hand picked and fermented with 10% whole bunch before nine months of maturation in 35% new French oak. Aromas of brooding black olive and liquorice open up to purple violets, cherry cola, plum and blackberry. The palate is subtle at first, with a core of red fruit, but texture grows with juicy plum, cranberry coulis and dark spices for a slatey, savoury finish.
