Bindi Dixon Pinot Noir 2023
The Dixon stems from a blend of the original 1988 Pinot Noir plantings at Bindi and portions of the 2001 Kaye vineyard. It deviates from the standard aging process of other Bindi Pinot Noirs, being bottled at ten months instead of fifteen. Crafted with destemmed fruit and wild yeast in open fermenters, the wine matures in small French oak barrels. The 2023 vintage immediately entices with fragrant notes of lifted red cherry, raspberry, strawberry, and spice, accompanied by subtle earthiness and savory cherry stone aromas. Its bright palate exhibits freshness and creaminess, along with well-textured qualities, culminating in a delightful, elegant finish carried by fine tannins. Historical precedent suggests that an additional five years of cellaring will enhance intensity and complexity, rendering it capable of cellaring for a decade or more.
