This week Peter and Tony crack open a bottle of 2021 Giant Steps Yarra Valley Rosé. TK recommends pairing it with fresh oysters and mignonette dressing.
Mignonette Dressing

Ingredients:
1/3 cup GOOD Cabernet or red wine Vinegar (I use Forum)
1 tsp freshly ground black pepper
6 small golden eschalots, peeled, very finely chopped
sea salt
Directions:
Combine all ingredients into a bowl a stir.
