Domenica Chardonnay 2025

In their words -  The 2025 Domenica Estate Chardonnay was handpicked, over the course of 10 days, by block and clone in mid February. The fruit was crushed, pressed and chilled in stainless steel overnight.

The juice fermented in a mixture of 600 litre demi-muids and 228 litre barriques. As usual, the new oak component is around 20%.  This year has produced a wine of purity and true representation of site. Stone fruit, white flowers and ginger aromatics lead to a mineral driven entry. The light toast, larger format oak brings depth and texture in the mid-palate, allowing the fruit to expand and carry through the full length of the wine.
