2021 Saraja Kintari Vermentino
Elegant and refined, with a grassy and floral nose, preceding a palate of honeyed ripe apricot and a silky, saline minerality - A great pairing for richer fish dishes such as grilled seabass or tuna tataki.
The grapes are picked by hand, early in September, then destemmed and gently pressed at a low temperature - all to maintain acidity as much as possible. The juice is cold-clarified by gravity sedimentation before fermenting in stainless steel tanks for 15 days at 16-18°C. The wine is then aged on lees for 6 months prior to bottling, then cellared in bottle for a further 2 months before release.
