Holm Oak Pinot Gris 2023

Perfectly ripe Pinot Gris, picked and sent straight to ferment. 20% wild ferment in old oak barrels and 10% wild fermented in tank which adds unique complexity and texture. Aged on lees for 2 months to enhance mouthfeel before blending and bottling.

Lifted aromas of pear and citrus jasmine with a layer of warm winter spices. Whilst the powerful palate is packed with flavour, it also has added complexity and weight as a result of the wild ferment. The wine finishes with lovely crisp natural acidity.
