Michaels thoughts - Tornatore Etna Bianco is produced from some of the highest altitude vineyards in the old world and made from a variety which I think has the potential to make some of the most profound and exciting white wines in the world. Located at 950-1050m elevation, the vines for this wine are situated high on the slopes of the active volcano of Mt Etna. Tornatore is a family run Etna producer that developed its modern estate to showcase the unique character of Mout Etna's terroir. The volcanic soils and high altitude create a perfect storm of refined and balanced acidity, UV radiation and poor soils for water stress that result in wines of exceeding purity, finesse and power. This wine is made from 100% Carricante, a variety seldom found outside of the slopes of Etna and has eerie similarities to Chardonnay. The diurnal shift creates a profound acid focus which is essential for food pairing wines and gives creedance to the longevity of the resulting wines. Unfortunately, production is quite limited. The wine is handled like Chablis, cold soak fermentation to heighten aromatics and a short resting period of only 3 months on lees prior to bottling. No new oak is used in the wine which highlights the varietal character of the Carricante grape.Ā Michael Morgan
