Stoke Cabernet Sauvignon 2022

Kangaroo Island gives Cabernet a character all its own: properly ripe, yet freshened by cool air and the influence of the Southern Ocean. Stoke’s twelve-acre vineyard sits at the heart of the project, where regenerative farming and a light-handed approach in the cellar allow the island to do most of the talking.

The fruit was destemmed with 10% retained as whole bunches, fermented in open vessels and matured for ten months in seasoned oak. Minimal sulphur was added before bottling. Red berries, capsicum and tomato leaf introduce a lively palate of blackcurrant, blackberry and bramble, held together by fresh acidity and unusually supple Cabernet tannins.
