Henri Chauvet, a former insurance man turned Auvergne winemaker, brings serious soul to this bottle. It’s a blend of old Gamay d’Auvergne, Beaujolais vines, and a few rare cousins, all grown on red clay and granite soils. Whole-cluster fermented, gently pressed, and aged half in stainless steel and half in old barrels, this is low-intervention winemaking at its most elegant. Think raspberry jam, a bouquet of fresh flowers, and that silky, almost velvety texture that makes the finish feel endless. Pure, juicy, and a bit wild—just like the bird it’s named after.
