This “Rao” Chardonnay from Domaine Simha is a luminescent whisper of Tasmanian terroir—pale straw in the glass, it unfurls aromas of crocus flower, lemon zest, oyster shell, and a soft dusting of almond milk wrapped in cashmere. Fermented wild on lunar-timed harvests and aged sur lie in new demi-muid, it offers delicate texture, bright saline lift and subtle oak warmth that weaves seamlessly through the palate. The gentle wild fruit energy and fine mineral grip make this micro-batch beauty feel alive, balanced and utterly poetic.
