100% Pinot Noir from the Cobaw Ridge original plantings. Simply made with mostly destemmed fruit, a short preferment maceration, fermented wild, gently pumped over and some hand plunging. Pressed off immediately once dry and given 12 months elevage in barrique, 25% new, all blonde toast, Gillet oak.
