Sourced from a range of dry-farmed vineyards, the grapes are hand-picked from steep, south-facing hillsides and elevated volcanic sites that benefit from cooling sea breezes. The wine undergoes a meticulous process of spontaneous fermentation, with a touch of adventurousness, fermenting hot and fast in large format barrels. Left to rest on gross lees, it develops a rich, textured mouthfeel with a succulent finish that balances its concentrated depth. Unfined, with the natural solids mixed in, this Chardonnay captures the essence of the terroir, making each sip a distinct and memorable experience.
