An Australian Rosé Masterclass: Six Wines to challenge expectation.

Too often dismissed as a summer novelty or poolside refreshment, Australian Rosé is a category that deserves far more respect. When made with intention, rosé can be textural, complex and as age-worthy as any white or red. It can speak of place, of winemaker philosophy, and of the delicate balance between fruit, structure and restraint.

In our Australian Rosé Masterclass, we explore six diverse Aussie Rosé, divided into three thoughtful brackets. Each pairing reveals a different truth about what rosé can be: playful yet precise, varietal yet site-driven, serious yet approachable. These wines can challenge expectations and command attention. They can also be just divinely delicious.

BRACKET ONE:

Playfulness, Texture & New Energy

2022 L.A.S VINO 'ALBINO PINOT' ROSÉ

Margaret River, Western Australia | RRP $59.99

Beginning in Margaret River, a region most people immediately associate with Chardonnay & Cabernet's of power, structure & polish, L.A.S VINO's ALBINO PINOT gently & playfully steps outside that expectation.

Nic Peterkin is the son of Dr Mike Peterkin, one of the founding pioneers who planted the Pierro vineyard, so wine quite literally runs in his veins. This wine comes from a tiny one hectare vineyard planted in 1980 with high density Pinot Noir. Sitting over granitic rock on the banks of the Willyabrup River, the Indian Ocean is only kilometres away & those cool breezes travel up the valley, stretching the ripening season.

The fruit is hand picked, chilled overnight, then very gently whole bunch pressed over several hours. Wild fermentation in French barriques, it goes through full secondary fermentation with fortnightly lees stirring before blending & bottling. No fining & very minimal sulphur.

What you taste is texture driven & slightly ferrous, with a savoury undercurrent. Pomegranate, grapefruit, lychee, guava, & that subtle sea spray note that's like the ocean leaning in. It's delicate, elegant & layered. Think Champagne's precision, but reimagined as something smashable & refreshing.

Food Pairing Suggestions:

  • Freshly shucked oysters with finger lime
  • WA marron w beurre blanc
  • Roast chicken w tarragon & preserved lemon
  • Pork rillettes w cornichons
  • Heirloom tomato salad w basil & sea salt

This wine thrives where freshness meets texture. It loves salt. It loves acid. It loves dishes that echo its savoury pulse.

2025 GENTLE FOLK 'RAINBOW JUICE' ROSÉ

Adelaide Hills, South Australia | RRP $35.99

Now we move to Adelaide Hills & GENTLE FOLK RAINBOW JUICE! Gentle Folk began in 2012 when Gareth Belton spent time in Basket Range alongside James Erskine of Jauma & Alex Schulkin of The Other Right, pioneers of the natural wine movement in the Adelaide Hills. Three barrels in 2013 turned into a thriving winery farming eight hectares organically with biodynamic preparations.

Rainbow Juice is named after Gareth's wife. It's playful, but it's not simple. Pinot Gris & Gewürztraminer are co-fermented on skins for six days before pressing. Sauvignon Blanc spends time on skins, then into 500 litre oak puncheons. A splash of Sangiovese is added to give a gentle pink blush & structural lift. This is predominantly white wine with a little red folded in. A touch of free run, a touch of skins, a touch of direct press.

In the glass it's aromatic, textural & lifted. Think nectarine skin, mandarin peel, wild strawberry, ginger spice & a flicker of herbal snap. Altitude & diurnal shift drive the acidity, keeping everything electric. It feels youthful, but never naive. Confident in its edges.

Food Pairing Suggestions:

  • Kingfish sashimi w yuzu
  • Vietnamese rice paper rolls
  • Thai larb w mint & lime
  • Roast pumpkin w harissa yoghurt
  • Charcuterie w pickled vegetables

Rainbow Juice loves colour and spice on the plate. This is a wine for conversation and shared plates. It thrives in that space between seriousness and spontaneity.

BRACKET TWO:

Grenache – Same Grape, Different Truths

Grenache may be Australia's most important rosé grape. But grape alone is not destiny. Site, pick date and intent shape the outcome.

2024 S.C. PANNELL 'ARIDO' ROSÉ

McLaren Vale, South Australia | RRP $31.99

STEPHAN PANNELL'S ARIDO ROSÉ hails from the Blewett Springs in McLaren Vale. Dry-grown bush vines rooted in sandy, free-draining soils. A warm region, yes, but tempered by ocean influence. Old vines bring concentration without weight.

Stephen was raised behind Moss Wood in Margaret River. His early career moved through Bordeaux, Burgundy, Barolo & Priorat before returning home & committing himself to Grenache. He often says it is the hardest grape to get right. That tension between generosity & fragility is what drives him. Arido is picked early to preserve acid line. Direct pressed. Cool fermented in stainless steel. No oak, no embellishment. Precision is the point.

In the glass it is bright, saline and linear. Sherbet & pink grapefruit. Strawberry & watermelon. Valencia orange rind with a faint five spice note that feels like citrus zest scattered over warm stone. There is clarity & quiet control. A benchmark Australian rosé.

Food Pairing Suggestions:

  • Kingfish crudo w grapefruit & olive oil
  • Fish tacos w lime & coriander
  • Pork dumplings w chilli vinegar
  • Watermelon, feta & mint
  • Charred corn w lime butter

Arido loves freshness and contrast. Think lift, crunch and salinity. This is rosé that sharpens flavours. It cuts through richness and amplifies brightness.

2025 SVEN JOSCHKE 'LA ADELINE' ROSÉ

Adelaide Hills, South Australia | RRP $29.99

Now contrast that with SVEN JOSCHKE'S LA ADELINE ROSÉ from the cooler Adelaide Hills. Sven Joschke, deeply inspired by time in Jura & guided by growers in Tanunda, his philosophy is simple: let nature do the talking.

La Adeline blends Grenache, Mourvèdre & Cinsault, a composition that nods to Provence, but is distinctly Adelaide Hills. The fruit is handpicked, then the Grenache & Mourvèdre are destemmed & pressed immediately. The Cinsault is whole bunch pressed bringing a touch of stalk tannin, giving it aperitif vibes. With longer lees contact than most rosé, we see a savoury depth & superb structure brought to the wine.

In the glass it leans more savoury and architectural than Arido. Red currant, blood orange, dried herbs & subtle spice. The cooler site, slower ferment and measured oak influence all leave their imprint. Here, technique and climate work in tandem. Same grape. Different intention. Different truth.

Food Pairing Suggestions:

  • Seared salmon w fennel & dill
  • Sardines w smoked paprika
  • Roast chicken w thyme & garlic
  • Turkey & cranberry w cracked pepper
  • Grilled eggplant w tahini & pomegranate

This rosé enjoys dishes with depth and herbal nuance. It embraces herbs. It handles gentle spice. It rewards plates with structure rather than sweetness.

BRACKET THREE:

Rosé As A Serious Wine

2025 DOMENICA NEBBIOLO ROSÉ

Beechworth, Victoria | RRP $41.99

Now we travel to Beechworth & DOMENICA. Peter Graham has worked this granite-rich site since the late 1990s, launching Domenica in 2012 with a clear ethos: site first, formula never. Here, Nebbiolo rosé is not a side project. It makes complete sense.

The fruit is basket pressed with minimal skin contact. Wild fermentation in seasoned barrique, some solids retained for texture. Malolactic fermentation is arrested to preserve line & tension. Extended lees ageing builds structure. It is bottled with ageing in mind.

This is a tannin-informed rosé. Savoury, architectural, deliberate. Wild strawberry, blood orange, rose petal & dried herbs, all carried by that unmistakable granite tension. Beechworth's altitude & soils are known for longevity & this wine sits confidently in that conversation. It is fine dining rosé & it stretches the definition of what rosé can be.

Food Pairing Suggestions:

  • Charred octopus w smoked paprika
  • Duck breast w sour cherry
  • Veal saltimbocca
  • Roast beetroot w whipped ricotta & thyme
  • Grilled radicchio w balsamic

This wine wants plates with shape & depth. It embraces bitterness. It respects tannin. It thrives alongside dishes that mirror its savoury edge.

2023 COBAW RIDGE 'IL PINKO' ROSÉ

Macedon Ranges, Victoria | RRP $55.99

For our final bracket, we challenge the idea that rosé must be drunk young & without thought. COBAW RIDGE IL PINKO ROSÉ is Syrah based (whole bunch), with 2023 hosting a splash of Lagrein. Gently pressed with minimal extraction to focus on purity & lift, followed by wild yeast fermentation in a blend of Georgian Qvevri & old French oak barrels. This mix allows subtle oxidation, texture & complexity.

The wine undergoes full malolactic fermentation, contributing to a softer mouthfeel & more complex flavour profile. After maturation & settling, the wine is racked gently off fine lees & bottled unfined, unfiltered.

Winemaker Alan Cooper's approach for Il Pinko is part of a broader minimal & terroir-focused ethos, low yields & biodynamic viticulture, translating wines into bottle with as little interference as possible.

This wine tastes like red cherry, tart raspberry, white pepper, anise & pine, with briny minerality, bright acidity & slate like tannin. Super refreshing, with flavours that go on through incredible texture! This is rosé that can sit in a cellar. It breaks the drink young myth.

Food Pairing Suggestions:

  • Prawns w preserved lemon & olive oil
  • Slow-roast pork shoulder w fennel & apple
  • Duck w smoked cherry sauce
  • Grilled zucchini & eggplant w tahini
  • Aged goat cheese or manchego

This is a wine for thoughtful plates built with flavours that mirror its mineral & structured nature.

~The entire Cobaw Ridge Estate is made up of 5 hectares under vine
