Giangirolami was an early adopted of strict organic principles, undertaking certification procedures as early as 1993. The sites for this Grechetto are located in the maritime influenced hills and planted on the classic tufa\/volcanic soils of region. The wine is made from 100% Grechetto, an anomaly in a region that is famed for blends that are consumed in youth due to the proximity to the major city in the region, Rome. The wine sees soft pressing of grapes followed by batonnage (lees stirring, like most Chardonnay) for a 6-8 month period before final blending and bottling.
